Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil, and lightly grease it with cooking spray.
2. Arrange the Saltines
Lay the saltine crackers in a single layer on the prepared baking sheet, covering the entire surface.
3. Make the Toffee
In a medium saucepan, melt the butter over medium heat. Add the brown sugar and stir constantly until the mixture comes to a boil.
Once boiling, continue to cook and stir for 3-4 minutes until the mixture thickens and turns a golden brown, caramel-like color.
4. Pour the Toffee
Immediately pour the hot toffee mixture evenly over the saltine crackers. Use a spatula to spread it out and cover all the crackers.
5. Bake
Place the baking sheet in the preheated oven and bake for 5-6 minutes, or until the toffee mixture is bubbling.
6. Add the Chocolate
Remove the baking sheet from the oven and immediately sprinkle the chocolate chips over the hot toffee. Let the chocolate sit for a minute or two to soften, then use a spatula to spread the melted chocolate evenly over the top.
7. Optional Toppings
While the chocolate is still melted, sprinkle chopped nuts, sea salt, or sprinkles over the top if desired.
8. Chill
Let the toffee cool at room temperature for about 10 minutes, then transfer it to the refrigerator to chill for at least 1-2 hours, or until the toffee and chocolate are fully set.
9. Break and Serve
Once fully set, break the saltine toffee into bite-sized pieces and serve
