- Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan.
- Mix the Cake Batter:
- In a large bowl, combine flour, sugar, baking soda, and salt.
- Add the eggs and crushed pineapple (with juice) to the dry ingredients and mix until just combined.
- Stir in shredded coconut if you’d like an extra tropical touch.
- Bake the Cake:
- Pour the batter into the prepared baking pan.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool completely in the pan.
- Prepare the Cream Cheese Frosting:
- In a medium bowl, beat together the softened cream cheese and butter until smooth.
- Add the powdered sugar and vanilla extract, beating until creamy and well-blended.
- Frost the Cake: Once the cake has cooled, spread the cream cheese frosting evenly over the top.
- Serve: Cut into squares and serve. For extra flair, garnish with more shredded coconut or pineapple slices on top.
