Hawaiian pineapple cake

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. Mix the Cake Batter:
    • In a large bowl, combine flour, sugar, baking soda, and salt.
    • Add the eggs and crushed pineapple (with juice) to the dry ingredients and mix until just combined.
    • Stir in shredded coconut if you’d like an extra tropical touch.
  3. Bake the Cake:
    • Pour the batter into the prepared baking pan.
    • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
    • Let the cake cool completely in the pan.
  4. Prepare the Cream Cheese Frosting:
    • In a medium bowl, beat together the softened cream cheese and butter until smooth.
    • Add the powdered sugar and vanilla extract, beating until creamy and well-blended.
  5. Frost the Cake: Once the cake has cooled, spread the cream cheese frosting evenly over the top.
  6. Serve: Cut into squares and serve. For extra flair, garnish with more shredded coconut or pineapple slices on top.
