Baked Pumpkin Fritter Bites

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Mix Wet Ingredients: In a large bowl, combine the pumpkin puree, egg, granulated sugar, brown sugar, vanilla extract, cinnamon, nutmeg, ginger, and salt. Mix well until smooth.
  3. Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, and baking soda.
  4. Combine Mixtures: Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined. If desired, fold in the chopped nuts.
  5. Form Fritter Bites: Using a tablespoon or cookie scoop, drop heaping tablespoons of the batter onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake: Bake in the preheated oven for 15 to 18 minutes, or until the fritter bites are lightly golden and a toothpick inserted in the center comes out clean.
  7. Cool and Serve: Allow the fritter bites to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
