– 2 garlic cloves – minced.

– About 2 Tbsp.Of taco seasoning mix.

– 1 can.Of black beans.

– 1 can.Of diced tomatoes – undrained.

– 1 Cup.Of corn kernels (fresh, canned, or frozen).

– 1 Cup.Of crushed tortilla chips.

– 1 1/2 Cups.Of shredded cheddar cheese.

– 1 1/2 Cups.Of shredded Monterey Jack cheese.

– 1/2 Cup.Of sliced black olives (optional, for garnish).

– 1/2 Cup.Of diced tomatoes (optional, for garnish).

– 1/4 Cup.Of chopped fresh cilantro (optional, for garnish).

PREPARATION:

1st Step

Prepare a baking dish that is 9 inches by 13 inches and gently oil it with cooking spray or butter, and prepare your oven to 375 degrees Fahrenheit (190 degrees Celsius).

2nd Step

Cook the ground beef in a large pan over medium heat until it is browned and cooked through, breaking it up with a spatula as it cooks, and cook until meat is no longer pink. Whenever it’s required, drain any extra grease.

3rd Step

After the ground beef has finished cooking, stir in the onion that has been finely chopped and the garlic that has been minced. Cook for another two to three minutes, stirring occasionally, until the onion becomes translucent and releases its aroma.

4th Step

Sprinkle the taco seasoning mix over the meat mixture and stir until the beef is well coated with the seasoning.

5th Step

Mix in the drained black beans as well as the chopped tomatoes that have not been drained. Allow the mixture to boil for approximately 5 minutes so that the flavors may combine and become more pronounced.

6th Step

Create the first layer of the casserole using one-half of the meat and bean mixture, and place it in the baking dish that has been prepared. Distribute it in a uniform layer.

7th Step

On top of the meat mixture, sprinkle one-half each of the corn kernels and the smashed tortilla chips with the other ingredients. And on top of the corn and chips, spread a layer of one-half of the shredded cheddar and Monterey Jack cheeses.

8th Step

Repeat the layering process with the remaining meat and bean mixture, corn, tortilla chips, and shredded cheeses. Repeat until all of the ingredients have been used.

9th Step

Put the baking dish in an oven that has been warmed to 350 degrees Fahrenheit, cover it with aluminum foil, and bake it for approximately 25 minutes, or until the cheese is melted and bubbling.

10th Step

After the casserole has baked for the allotted amount of time, take it out of the oven and let it cool for a few minutes. If you choose, you may add some sliced black olives, diced tomatoes, and chopped fresh cilantro to the top of the dish as a garnish. To add an additional layer of creaminess to the dish, serve with dollops of sour cream on top.
