In the crock pot, add the diced potatoes, onion, chicken broth, cream of chicken soup, ranch seasoning mix, garlic powder, onion powder, salt, and pepper. Stir everything together.
3. Cook
Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the potatoes are tender.
4. Mash or Blend
Once the potatoes are fully cooked, use a potato masher to mash some of the potatoes in the crock pot for a thicker soup, or leave them whole for a chunkier texture. If you prefer a smoother soup, use an immersion blender.
5. Add Cream Cheese and Heavy Cream
Stir in the softened cream cheese, heavy cream, and shredded cheddar cheese. Stir until everything is melted and combined.
6. Add Bacon
Stir in the crumbled bacon and cook for another 10-15 minutes on low until everything is heated through and creamy.
7. Serve
Ladle the soup into bowls and garnish with extra cheddar cheese, bacon, and green onions for a loaded potato soup experience.
