Crock Pot Crack Potato Soup

Instructions

1. Prep the Ingredients

  • Peel and dice the potatoes and chop the onion.

2. Add Ingredients to the Crock Pot

  • In the crock pot, add the diced potatoes, onion, chicken broth, cream of chicken soup, ranch seasoning mix, garlic powder, onion powder, salt, and pepper. Stir everything together.

3. Cook

  • Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the potatoes are tender.

4. Mash or Blend

  • Once the potatoes are fully cooked, use a potato masher to mash some of the potatoes in the crock pot for a thicker soup, or leave them whole for a chunkier texture. If you prefer a smoother soup, use an immersion blender.

5. Add Cream Cheese and Heavy Cream

  • Stir in the softened cream cheese, heavy cream, and shredded cheddar cheese. Stir until everything is melted and combined.

6. Add Bacon

  • Stir in the crumbled bacon and cook for another 10-15 minutes on low until everything is heated through and creamy.

7. Serve

  • Ladle the soup into bowls and garnish with extra cheddar cheese, bacon, and green onions for a loaded potato soup experience.
