Instructions:
Prepare the potatoes:
Peel and dice the potatoes into small cubes. You can leave the skin on if you prefer a rustic, heartier soup.
Cook the soup base:
In a large pot, combine the diced potatoes, cream of potato soup, chicken broth, milk, garlic powder, onion powder, salt, and pepper. Stir to combine.
Simmer the soup:
Bring the mixture to a simmer over medium heat. Reduce the heat to low and let it cook for about 15-20 minutes, or until the potatoes are fork-tender and the soup has thickened a little. Stir occasionally to prevent it from sticking to the bottom of the pot.
Mash or blend the soup (optional):
If you like a smoother texture, you can use a potato masher to mash the potatoes right in the pot or use an immersion blender to blend the soup to your desired consistency. If you prefer a chunkier soup, just leave the potatoes as they are.
Taste and adjust:
Give your soup a taste and adjust the seasoning as needed—add more salt, pepper, or garlic powder if you like it spicier.
Serve:
Ladle the soup into bowls and add any desired toppings. Shredded cheese, a dollop of sour cream, chopped green onions, and bacon bits are all great options for extra flavor and texture.
