1. Preheat the Oven
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or spray it with non-stick cooking spray.
2. Make the Lemon Cheesecake Filling
- In a medium bowl, mix together the softened cream cheese, granulated sugar, lemon juice, lemon zest, and vanilla extract until smooth and creamy.
3. Prepare the Crescent Rolls
- Open the can of crescent roll dough and separate the triangles. Lay the dough triangles flat on the prepared baking sheet.
4. Add the Filling
- Place about 1 tablespoon of the lemon cheesecake filling at the wider end of each crescent dough triangle.
- Gently roll up each triangle, starting at the wide end, tucking in the filling as you roll toward the narrow end.
5. Brush with Butter and Sprinkle Sugar
- Brush the tops of the rolled crescent rolls with the melted butter and sprinkle with a little granulated sugar for extra sweetness.
6. Bake
- Bake the crescent rolls in the preheated oven for 10-12 minutes, or until they are golden brown and the dough is fully cooked through.
7. Cool and Serve
- Allow the rolls to cool for a few minutes before serving.
- For an extra touch, dust the rolls with powdered sugar before serving.
