Garlic Mushroom Grilled Cheese

Instructions:

  1. Prepare the mushrooms:
    • In a skillet, melt 2 tablespoons of butter over medium heat.
    • Add the sliced mushrooms and sauté until they are golden brown, about 5-7 minutes.
    • Stir in the minced garlic and cook for another 1-2 minutes, until fragrant. Season with salt, pepper, and thyme (if using). Remove from heat and set aside.
  2. Assemble the sandwiches:
    • Spread butter on one side of each slice of bread.
    • On the unbuttered side of two slices, layer cheese, followed by the garlic mushrooms, and then more cheese. Top with the remaining slices of bread, buttered side out.
  3. Grill the sandwiches:
    • Heat a skillet over medium heat. Place the sandwiches in the skillet and cook for about 3-4 minutes on each side, until the bread is golden and crispy, and the cheese is melted.
  4. Serve:
    • Remove from the skillet, slice in half, and enjoy your Garlic Mushroom Grilled Cheese!
