GARLIC PARMESAN CHICKEN LASAGNA ROLL-UPS

Instructions

1. Preheat the Oven

  • Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

2. Prepare the Filling

  • In a large bowl, mix together the shredded chicken, ricotta cheese, mozzarella cheese, Parmesan cheese, minced garlic, egg, basil, parsley, salt, and pepper. Stir until well combined.

3. Cook the Lasagna Noodles

  • Boil the lasagna noodles according to the package instructions until al dente. Drain and lay the noodles flat on a clean surface or parchment paper to cool slightly.

4. Make the Garlic Parmesan Sauce

  • In a medium saucepan, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.
  • Stir in the flour and cook for another minute to form a roux.
  • Gradually whisk in the milk and continue to cook, stirring constantly, until the sauce thickens, about 3-4 minutes.
  • Stir in the Parmesan cheese, Italian seasoning, salt, and pepper. Once the cheese is melted and the sauce is smooth, remove from heat.

5. Assemble the Roll-Ups

  • Spread a thin layer of the Garlic Parmesan Sauce on the bottom of the prepared baking dish.
  • Spread about 2-3 tablespoons of the chicken mixture onto each lasagna noodle, then roll the noodle up from one end to the other.
  • Place each rolled-up lasagna, seam-side down, in the baking dish. Repeat until all noodles are filled.

6. Top with Sauce and Bake

  • Pour the remaining Garlic Parmesan Sauce evenly over the lasagna roll-ups.
