Ingredients:
1 12-16oz bag of pecans
1 12-16oz bag of cashews
1 12-16oz bag of almonds
1 bag of dried cranberries
1/2 cup honey
6 tbsp coconut oil
1 tsp vanilla extract
1 1/2 tsp ground cinnamon
Instructions:
1. Preheat your oven to 275°F (135°C).
2. In a large mixing bowl, combine the pecans, cashews, almonds, and dried cranberries.
3. In a small saucepan, heat the honey and coconut oil over low heat until melted.
4. Remove the saucepan from the heat and stir in the vanilla extract and ground cinnamon.
5. Pour the honey mixture over the nut and cranberry mix, stirring well to ensure everything is evenly coated.
6. Spread the mixture out onto a large baking sheet lined with parchment paper.
7. Bake in the preheated oven for 20-25 minutes, stirring every 10 minutes to prevent burning and ensure even baking.
8. If you prefer a crunchier texture, bake for an additional 5-10 minutes.
9. Once done, remove from the oven and let the mixture cool completely before serving or storing in an airtight container.
