Homemade Pineapple Soft Serve Ice Cream

  1. Prepare Ingredients:
    • Make sure the pineapple chunks are fully frozen for the best creamy texture.
  2. Blend the Soft Serve:
    • In a high-powered blender or food processor, combine the frozen pineapple chunks, coconut milk, honey (if using), lemon juice, and vanilla extract.
    • Blend on high speed, stopping occasionally to scrape down the sides, until the mixture is smooth and creamy. This may take a few minutes, so be patient!
  3. Adjust Consistency:
    • If the mixture is too thick, add a bit more coconut milk, one tablespoon at a time, until you reach a soft-serve consistency.
  4. Serve Immediately:
    • For an authentic soft serve experience, spoon the mixture into a piping bag fitted with a star tip and pipe it into bowls or cups.
    • Serve immediately for the best texture, or freeze for 10-15 minutes to firm it up slightly if desired.
