In a deep skillet or heavy-bottomed pot, heat about 2 inches of vegetable oil over medium heat until it reaches 350°F (175°C). Use a thermometer to ensure the correct temperature for frying.
2. Make the Batter
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate bowl, whisk the eggs, milk, and vanilla extract together.
Gradually add the wet ingredients to the dry ingredients, stirring until smooth and well combined. The batter should be thick but pourable.
3. Fry the Bites
Once the oil is heated, use a spoon or a small cookie scoop to carefully drop small spoonfuls of the batter into the hot oil.
Fry the bites in batches, making sure not to overcrowd the pan. Fry for 1-2 minutes per side, or until golden brown and crispy.
Remove the funnel cake bites from the oil using a slotted spoon and place them on a paper towel-lined plate to drain any excess oil.
4. Dust with Powdered Sugar
While still warm, generously dust the funnel cake bites with powdered sugar or cinnamon sugar.
5. Serve
Serve the funnel cake bites warm with your favorite dipping sauces, or enjoy them on their own with a light dusting of powdered sugar.
