Lazy Chocolate Chip Cookie Bars

Instructions

1. Heat the Oil

  • In a deep skillet or heavy-bottomed pot, heat about 2 inches of vegetable oil over medium heat until it reaches 350°F (175°C). Use a thermometer to ensure the correct temperature for frying.

2. Make the Batter

  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • In a separate bowl, whisk the eggs, milk, and vanilla extract together.
  • Gradually add the wet ingredients to the dry ingredients, stirring until smooth and well combined. The batter should be thick but pourable.

3. Fry the Bites

  • Once the oil is heated, use a spoon or a small cookie scoop to carefully drop small spoonfuls of the batter into the hot oil.
  • Fry the bites in batches, making sure not to overcrowd the pan. Fry for 1-2 minutes per side, or until golden brown and crispy.
  • Remove the funnel cake bites from the oil using a slotted spoon and place them on a paper towel-lined plate to drain any excess oil.

4. Dust with Powdered Sugar

  • While still warm, generously dust the funnel cake bites with powdered sugar or cinnamon sugar.

5. Serve

  • Serve the funnel cake bites warm with your favorite dipping sauces, or enjoy them on their own with a light dusting of powdered sugar.
