1. Preheat the Oven

3. Cream the Butter and Sugar

- Add the egg, lemon juice, lemon zest, and vanilla extract, mixing until well combined.

5. Form the Cookies
- Scoop about 1 tablespoon of dough and roll it into a ball. Roll each dough ball in extra granulated sugar.
- Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
6. Bake the Cookies
- Bake in the preheated oven for 8-10 minutes, or until the edges are set and lightly golden, but the centers are still soft.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
