Loaded Potato Meatloaf Casserole

Instructions

1. Preheat the Oven

  • Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.

2. Make the Meatloaf Layer

  • In a large mixing bowl, combine the ground beef, breadcrumbs, onion, garlic, eggs, milk, ketchup, Worcestershire sauce, salt, and black pepper.
  • Mix until all the ingredients are well combined, but do not overmix.
  • Press the meat mixture evenly into the bottom of the prepared baking dish.

3. Bake the Meatloaf Layer

  • Bake in the preheated oven for 25-30 minutes, or until the meat is cooked through and reaches an internal temperature of 160°F (71°C).
  • Remove from the oven and carefully drain any excess grease.

4. Make the Mashed Potato Layer

  • In a separate bowl, mix the mashed potatoes with sour cream and butter until smooth and creamy.
  • Spread the mashed potatoes evenly over the cooked meatloaf layer.

5. Add the Toppings

  • Sprinkle the shredded cheddar cheese and crumbled bacon over the mashed potato layer.

6. Bake Again

  • Return the casserole to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

7. Serve

  • Garnish with sliced green onions and serve hot.
