Magic Lemon Cobbler

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the sugar, flour, baking powder, and salt until well combined.
  3. Add Wet Ingredients: Gradually stir in the milk and melted butter until the mixture is smooth. Fold in the lemon juice, lemon zest, and vanilla extract (if using) until combined.
  4. Pour into Baking Dish: Pour the batter into the prepared baking dish. Do not stir; the batter will be thin.
  5. Add Lemon Filling: In a separate bowl, combine 1 cup of granulated sugar with 1 cup of lemon juice. Pour this lemon mixture over the batter in the baking dish. Again, do not stir.
  6. Bake: Bake in the preheated oven for 40 to 45 minutes, or until the top is golden and set.
  7. Cool and Serve: Allow the cobbler to cool slightly before serving. It can be served warm or at room temperature, topped with whipped cream or vanilla ice cream if desired.
