Mississippi Mud Potatoes

Directions:

  1. Preheat the oven to 400°F (200°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, mix the diced potatoes with the melted butter, garlic powder, onion powder, salt, and pepper until evenly coated.
  3. Transfer the potatoes to the greased baking dish and bake for 25-30 minutes, or until they are golden and tender.
  4. Remove the dish from the oven and stir in the sour cream, cheddar cheese, mozzarella cheese, and crumbled bacon.
  5. Top the potatoes with shredded Parmesan (if using) and return to the oven for another 10-15 minutes, or until the cheese is melted and bubbly.
  6. Garnish with chopped green onions and serve hot.
