Heat the olive oil in a large pot or deep skillet over medium heat.
Add the chicken pieces to the pot, seasoning with salt, pepper, onion powder, and Italian seasoning. Cook for 5-6 minutes until the chicken is browned on all sides but not fully cooked through.
Add the minced garlic and sauté for another 30 seconds, until fragrant.
2. Add the Liquids and Pasta
Pour in the chicken broth and marinara sauce, stirring to combine.
Add the pasta to the pot and stir everything together.
Bring the mixture to a boil, then reduce the heat to low and cover the pot. Simmer for 15-20 minutes, stirring occasionally, until the pasta is tender and the chicken is fully cooked.
3. Add the Cheese
Once the pasta is cooked, remove the pot from the heat and stir in the Parmesan cheese.
Sprinkle the mozzarella cheese evenly over the top. Cover the pot and let the cheese melt for about 3-5 minutes, until gooey and fully melted.
4. Serve
Garnish with fresh basil or parsley if desired.
Serve hot with garlic bread or a side salad for a complete meal.
