1. Preheat the Oven
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
2. Make the Cookie Dough
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the ricotta cheese, eggs, orange zest, and orange juice, mixing until well combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Gently fold in the diced peaches.
3. Bake the Cookies
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
4. Make the Orange Glaze
- In a small bowl, whisk together the powdered sugar, orange juice, and orange zest until smooth.
5. Glaze the Cookies
- Once the cookies are completely cool, drizzle the orange glaze over the top using a spoon or a piping bag.
- Let the glaze set for about 15 minutes before serving.
