1. Prepare the Cookie Dough
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy. Beat in the egg yolk and vanilla extract.
- Gradually add the flour and salt, mixing until a soft dough forms.
2. Shape the Cookies
- Roll the dough into 1-inch balls and place them on the prepared baking sheet, about 2 inches apart.
- Use your thumb or the back of a teaspoon to make an indentation in the center of each cookie to create a well for the pecan filling.
3. Make the Pecan Filling
- In a small bowl, combine the chopped pecans, brown sugar, corn syrup, melted butter, vanilla extract, and salt. Stir until well mixed and sticky.
4. Fill the Cookies
- Spoon about 1 teaspoon of the pecan mixture into the indentation of each cookie, filling it generously.
5. Bake
- Bake the cookies in the preheated oven for 10-12 minutes, or until the edges of the cookies are lightly golden and the filling is bubbly.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
