Roasted Sweet Potatoes

Instructions

1. Preheat the Oven

  • Preheat your oven to 425°F (220°C). A hot oven helps to crisp up the edges of the sweet potatoes while keeping the inside soft and tender.

2. Prepare the Sweet Potatoes

  • Wash and dry the sweet potatoes. You can peel them if you prefer a smoother texture, or leave the skin on for extra fiber and flavor.
  • Cut the sweet potatoes into evenly sized cubes or wedges, about 1-inch thick. Consistent sizing ensures they cook evenly.

3. Season the Sweet Potatoes

  • In a large bowl, toss the sweet potatoes with olive oil, ensuring they are well-coated.
  • Add salt, pepper, and any optional seasonings like paprika, garlic powder, or herbs. Mix everything until the sweet potatoes are evenly coated with the oil and spices.

4. Spread on a Baking Sheet

  • Spread the seasoned sweet potatoes in a single layer on a large baking sheet. Make sure they aren’t overcrowded, as this can cause them to steam instead of roast, preventing them from getting crispy.
  • For best results, line the baking sheet with parchment paper to prevent sticking and make cleanup easier.

5. Roast the Sweet Potatoes

  • Roast the sweet potatoes in the preheated oven for 25-35 minutes, flipping them halfway through to ensure even browning.
  • The sweet potatoes are done when they are golden brown, crispy on the edges, and tender in the center. Test with a fork to check if they are soft inside.

6. Serve and Garnish

  • Remove the sweet potatoes from the oven and transfer them to a serving dish.
  • Garnish with freshly chopped parsley for a pop of color and freshness.
  • Serve immediately while they are still warm and crispy.
