1. Prepare the Salmon Mixture
- In a large mixing bowl, add the drained salmon and flake it with a fork.
- Add the diced onion, breadcrumbs, eggs, mayonnaise, mustard, lemon juice, Old Bay seasoning, garlic powder, salt, and pepper.
- Mix well until everything is fully combined and the mixture holds together.
2. Form the Patties
- Shape the salmon mixture into 8-10 patties, about ½-inch thick.
3. Heat the Oil
- Heat the vegetable oil in a large skillet over medium heat.
4. Fry the Salmon Patties
- Place the salmon patties into the skillet and cook for 3-4 minutes on each side, or until golden brown and crispy.
- Transfer the patties to a plate lined with paper towels to drain excess oil.
5. Serve
- Serve hot with lemon wedges for a burst of freshness. Enjoy with classic Southern sides like coleslaw, green beans, or cornbread.
