Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with non-stick cooking spray.
2. Cook the Sausage
In a large skillet, cook the breakfast sausage over medium heat until fully browned and cooked through, breaking it into small crumbles as it cooks. Drain any excess grease.
3. Assemble the Casserole
Spread the cooked sausage evenly in the bottom of the prepared baking dish.
In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper.
Stir in 1 ½ cups of the shredded cheddar cheese into the egg mixture.
4. Add the Tater Tots
Pour the egg and cheese mixture evenly over the sausage in the baking dish.
Arrange the frozen tater tots in a single layer on top of the egg mixture.
5. Bake
Bake the casserole in the preheated oven for 40-45 minutes, or until the eggs are set and the tater tots are golden and crispy.
Remove from the oven and sprinkle the remaining ½ cup of shredded cheddar cheese over the top. Bake for an additional 5 minutes, or until the cheese is melted.
6. Serve
Let the casserole cool for a few minutes before garnishing with fresh parsley and serving warm.
