Wash and scrub the potatoes, then pierce them with a fork a few times.
Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until tender when pierced with a fork.
3. Scoop and Mash the Potatoes
Once the potatoes are done baking, let them cool for a few minutes.
Slice the potatoes in half and scoop the flesh into a large mixing bowl, discarding the skins.
Mash the potatoes until they reach your desired consistency.
4. Mix the Casserole Ingredients
Add the sour cream, milk, melted butter, 1 ½ cups shredded cheddar cheese, ½ cup crumbled bacon, 2 sliced green onions, garlic powder, onion powder, salt, and pepper to the mashed potatoes.
Stir until well combined.
5. Assemble the Casserole
Transfer the potato mixture to a greased 9×13-inch baking dish, spreading it evenly.
Top with the remaining ½ cup shredded cheddar cheese and ½ cup crumbled bacon.
6. Bake
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and the casserole is heated through.
7. Garnish and Serve
Remove from the oven and garnish with the remaining sliced green onions.
