Twice Baked Potato Casserole With Bacon

Instructions

1. Preheat the Oven

  • Preheat your oven to 400°F (200°C).

2. Bake the Potatoes

  • Wash and scrub the potatoes, then pierce them with a fork a few times.
  • Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until tender when pierced with a fork.

3. Scoop and Mash the Potatoes

  • Once the potatoes are done baking, let them cool for a few minutes.
  • Slice the potatoes in half and scoop the flesh into a large mixing bowl, discarding the skins.
  • Mash the potatoes until they reach your desired consistency.

4. Mix the Casserole Ingredients

  • Add the sour cream, milk, melted butter, 1 ½ cups shredded cheddar cheese, ½ cup crumbled bacon, 2 sliced green onions, garlic powder, onion powder, salt, and pepper to the mashed potatoes.
  • Stir until well combined.

5. Assemble the Casserole

  • Transfer the potato mixture to a greased 9×13-inch baking dish, spreading it evenly.
  • Top with the remaining ½ cup shredded cheddar cheese and ½ cup crumbled bacon.

6. Bake

  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and the casserole is heated through.

7. Garnish and Serve

  • Remove from the oven and garnish with the remaining sliced green onions.
  • Serve warm as a side dish.
