Vegetable Croquettes: Quick and Easy to Make!

A healthy and delicious alternative to traditional croquettes. They are made with blended vegetables and flour, then breaded and fried until crispy. Served with a sauce or dressing, these croquettes are a perfect option for a healthy lunch or dinner.


1 kg of potatoes
200 g carrots
200g peas (can be frozen)
200g green beans (can be frozen)
1/4 cup of chopped parsley
2 eggs
100g parmesan cheese
3-4 eggs, beaten
2 cups of breadcrumbs


Boil and peel the potatoes and carrots.
Chop the carrots and green beans. Mash the potatoes, add 2 eggs, salt, pepper, parmesan.
Add carrots, peas, asparagus beans, parsley.
Form balls and press with a flat bottom of cup.
Dip in egg, then in breadcrumbs and fry until golden.
