  • 2 liters (approximately 8.5 cups) of milk
  • 1.5 – 2 tablespoons of salt
  • 400 grams (about 14 ounces) of sour cream
  • 6 eggs


  1. Prepare the Milk Mixture:
    • Pour milk into a pot and add salt. Stir well and bring it to a boil. Adjust salt according to taste preference.
  2. Prepare Egg Mixture:
    • In a separate bowl, whisk the eggs until fluffy. Then, incorporate sour cream into the beaten eggs.
  3. Combine Mixtures:
    • Once the milk reaches a boil, gradually add the egg mixture while stirring continuously. Avoid scrambling the eggs by incorporating them gently off the heat.
  4. Cooking Process:
    • Allow the mixture to simmer for approximately 5 minutes. You should observe curds forming and whey separating.
  5. Straining and Shaping:
    • Line a sieve with multiple layers of cheesecloth and strain the mixture into it. After draining excess liquid, press the cheese firmly.
    • Cover the cheese with cheesecloth and place a weight on top. Once cooled, refrigerate the cheese.
  6. Enhance Texture (Optional):
    • For a smoother texture, substitute part of the sour cream with kefir (200g) before adding to the egg mixture.
