Wholesome Delight: Nutrient-Rich Cake without Refined Sugar

In our pursuit of healthier alternatives, this recipe for a delightful cake without refined sugar has become a household favorite, even earning the approval of the most discerning palates. Packed with wholesome ingredients, it’s a treat that not only satisfies cravings but also nourishes the body.

Ingredients:

  • 2 cups of spelt flour (240 ml cup)
  • 2 eggs
  • 1 cup of milk
  • 2 large juicy apples
  • 2 medium-sized carrots
  • 100g of nuts of your choice
  • 0.5 cup of rolled oats
  • 50g of raisins
  • 100g of flaxseeds
  • 50g of dried cranberries
  • 1 cup of brown sugar
  • 1 teaspoon of baking powder
  • 0.5 teaspoon of ground cinnamon
  • 1 teaspoon of baking soda
  • Pinch of salt

For the Glaze:

  • 60g of dark chocolate
  • 1 teaspoon of oil

Instructions:

  1. Begin by chopping the nuts into smaller pieces and lightly toasting them in a dry pan.
  2. Peel and grate the apples and carrots using a coarse grater.
  3. Combine the raisins and cranberries in a bowl.
  4. Grind the nuts in a blender or food processor.
  5. In a separate bowl, mix all the dry ingredients including sugar, nuts with raisins and cranberries.
  6. Add the grated apples, carrots, and eggs to the dry mixture. Mix thoroughly with a spoon.
  7. Line a 25 x 35 cm baking tray with parchment paper and spread the batter evenly.
  8. Preheat the oven to 180°C and bake for approximately 40 minutes.
  9. Once baked, allow the cake to cool.
  10. Melt the chocolate in a double boiler and stir in the oil.
  11. Cut the cooled cake into squares and drizzle each with a teaspoon of chocolate glaze, decorating with dried fruits or nuts as desired.
