In our pursuit of healthier alternatives, this recipe for a delightful cake without refined sugar has become a household favorite, even earning the approval of the most discerning palates. Packed with wholesome ingredients, it’s a treat that not only satisfies cravings but also nourishes the body.
Ingredients:
- 2 cups of spelt flour (240 ml cup)
- 2 eggs
- 1 cup of milk
- 2 large juicy apples
- 2 medium-sized carrots
- 100g of nuts of your choice
- 0.5 cup of rolled oats
- 50g of raisins
- 100g of flaxseeds
- 50g of dried cranberries
- 1 cup of brown sugar
- 1 teaspoon of baking powder
- 0.5 teaspoon of ground cinnamon
- 1 teaspoon of baking soda
- Pinch of salt
For the Glaze:
- 60g of dark chocolate
- 1 teaspoon of oil
Instructions:
- Begin by chopping the nuts into smaller pieces and lightly toasting them in a dry pan.
- Peel and grate the apples and carrots using a coarse grater.
- Combine the raisins and cranberries in a bowl.
- Grind the nuts in a blender or food processor.
- In a separate bowl, mix all the dry ingredients including sugar, nuts with raisins and cranberries.
- Add the grated apples, carrots, and eggs to the dry mixture. Mix thoroughly with a spoon.
- Line a 25 x 35 cm baking tray with parchment paper and spread the batter evenly.
- Preheat the oven to 180°C and bake for approximately 40 minutes.
- Once baked, allow the cake to cool.
- Melt the chocolate in a double boiler and stir in the oil.
- Cut the cooled cake into squares and drizzle each with a teaspoon of chocolate glaze, decorating with dried fruits or nuts as desired.
