Peach cookies

  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup peeled and diced peaches (about 2 medium-sized peaches)
  • 1/2 cup chopped pecans or walnuts (optional)

Preparation:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or silicone baking mat and set aside.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs, one at a time, followed by the vanilla extract, mixing well after each addition.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Gently fold in the diced peaches and chopped pecans or walnuts, if using.
