Ingredients
Biscuit:
- 3 egg yolks
- 3 tbsp sugar
- 3 tbsp flour
- 3 whipped egg whites
Curd layer:
- ½ lb curd
- 1 cup powdered sugar
- Juice of 1 lemon
- Zests of 1 lemon
- ⅓ oz gelatin fix
- Halved strawberries
- Strawberry glaze
- 1 ⅓ cup whipped cream
Steps
- Step 1
Separate the egg yolks from the whites. Whip the egg whites until they form stiff peaks.
- Step 2
Beat together the egg yolks with sugar.
- Step 3
Add the flour and two tablespoons of whipped egg whites to the yolks.
- Step 4
Carefully fold in the rest of the egg whites.
- Step 5
Pour the batter into a buttered and floured, 7 inch-wide baking pan. Bake for about 15-20 minutes at 350°F.

Place halved strawberries at the edge of the cake-pan.
- Step 7
For the cream, mix the sour cream with powdered sugar, lemon zest and lemon juice.

Add in the gelatin.

Add and mix in the whipped cream.
- Step 10
Carefully apply the creme on top of the sponge, in a way that the strawberries remain at the sides.

Pour strawberry glaze on top and allow it to cool and set.
