Chinese Chicken Cabbage Stir Fry

Directions:

  1. Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the sliced chicken and stir-fry until browned and cooked through, about 5-7 minutes. Remove from the pan and set aside.
  2. In the same pan, add the remaining tablespoon of oil, followed by the minced garlic and ginger. Stir-fry for about 30 seconds until fragrant.
  3. Add the shredded cabbage and stir-fry for 4-5 minutes, until it starts to soften but still retains some crunch.
  4. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, hoisin sauce, and cornstarch (if using). Pour the sauce over the cabbage and toss to coat.
  5. Return the cooked chicken to the pan and stir to combine with the cabbage and sauce. Cook for another 2-3 minutes, allowing the flavors to meld.
  6. Garnish with sliced green onions and sesame seeds before serving.
