Cheesesteak Tortellini in Rich Provolone Sauce

Directions:

  1. Cook the tortellini according to the package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced beef, season with salt and pepper, and cook until browned, about 3-4 minutes per side. Remove the beef from the skillet and set aside.
  3. In the same skillet, add the onion, bell pepper, and garlic. Cook until softened, about 4-5 minutes.
  4. Pour in the beef broth and Worcestershire sauce, scraping up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.
  5. Reduce the heat to low and stir in the heavy cream. Add the shredded provolone and stir until the sauce is smooth and creamy.
  6. Return the beef to the skillet, followed by the cooked tortellini. Toss everything together to coat the pasta in the sauce.
  7. Let it cook for an additional 2-3 minutes to heat through. Garnish with fresh parsley if desired and serve hot.
